Prickly Pear Margarita By Kyle Wagner
PHOENIX Uniquely Southwestern, this refreshingly sweet-tart cocktail is from The Phoenician resort and was published in Gwen Walters' Par Fork! The Golf Resort Cookbook (Pen & Fork Communications, 2002). Prickly pear syrup is available in specialty markets or you can find it on the Internet.
Ingredients: 3 tbsp. quality tequila 2 tbsp. Triple Sec 1 tbsp. prickly pear syrup 1/2 cup fresh lemonade 1 lime wedge
Insturctions:
Pour all ingredients into a shaker or a blender. Mix well. Salt the rim of a margarita glass (dip in a little lemonade or lime juice). Add ice and pour in margarita. Garnish with lime wedge.
