Spiked Vanilla Fruit SaladFrom: www.yummly.com/Adult version...NOT FOR KIDS...Ingredients: 1 can (20 ounces, chunk pineapple) plus 1 can (8 ounces) pineapple chunks; reserve juice 1 package (5.1 ounces each) instant vanilla or lemon pudding mix (Can use sugar-free) 2 cans (15 ounces each) mandarin oranges, drained 2 medium red apples, chopped 2 medium Granny Smith apples, chopped 1/2 cup red seedless grapes, slice in half 1 large banana
Directions: Drain pineapple, reserving juice; set pineapple aside. Slice banana in 1/8 in slices and put in pineapple juice so it won't turn brown.
Adult version...NOT FOR KIDS... Add enough cold water to juice to make 1 1/2 cups. **if using the vodka, use it in place of the water.**In a very large bowl, whisk juice mixture and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in the oranges, apples, bananas, grapes and reserved pineapple. Refrigerate about an hour or until chilled.
**Remember the longer you let alcohol sit on the fruit, it will break down the fibers in the fruit.

We Loved this spiked version. It was something different and light. We live in an adult RV park and this went over bigtime. It took them a while to figure out what "that" taste was. I did tell them it was alcohol because some don't drink. But, they all tastes it and loved it. I got asked for the recipe a lot. Try this, it's simple and adults love it. The neighborhood gave this recipe...Here is a picture of my version of this recipe...
