Paleo Buffalo Chicken Meatballs (Great as a Snack or for Parties)

I’ve got to be honest with everyone about something. There are very few things in life that I find more addictive than the taste of spicy hot buffalo chicken. I love fancy dinners as much as the next person, but I'll always have a special place in my heart for some good buffalo chicken. That’s why I’m thrilled to share this recipe for paleo friendly buffalo chicken meatballs. The meatballs are made with ground chicken and a few other choice ingredients, and the homemade buffalo sauce? You just won’t believe how incredibly tasty it is until you give it a try. This is now easily one of my all-time favorite paleo recipes, and I’m sure it will become one of your favorites as well.
Makes: 6 servings
Ingredients
For the meatballs
1 pound ground chicken
1 egg
½ tsp garlic powder
½ tsp onion powder
4 tbsp almond flour
salt, black pepper to taste
For the sauce
½ cup Frank's Red Hot Sauce
2½ tbsp. ghee
1 tsp apple cider vinegar
½ tsp garlic powder
1/8 tsp cayenne pepper
For serving
1 spring onion, sliced
Directions
Preheat oven to 350°F.
To make the meatballs, in a large mixing bowl place all the ingredients.
Season with salt and black pepper to taste.
Mix to combine.
Form the mixture into 1 inch meatballs and place them on a baking sheet lined with parchment paper.
Bake in preheated oven for 20-25 minutes.
Meanwhile, make the sauce.
Place all the ingredients in a small saucepan and heat over medium heat until ghee is melted.
Whisk to combine and set aside.
Remove the cooked meatballs from the oven and toss them with hot sauce.
Sprinkle with spring onion and serve.
(For those who are not paleo...don't forget the Ranch or Blue Cheese dressing)
