Paleo Overnight Oats (Whole30) From: Justin and Erica @ realsimplegood.com/paleo-overnight-oats/Only recently have we gotten on the overnight oats bandwagon. And since then, we are freaking obsessed and have made these Paleo overnight oats like 3 or 4 times in the past 2 weeks. They're kind of addicting and able to be made Whole30 compliant too! Prep time: 15 min Serves: 2Ingredients 1.25 cups soft nuts (we like walnuts, pecans, sunflower seeds, pepitas, pili nuts, etc.)2 tbsp chia seeds1.5 tsp ground flax seed1 tbsp pure maple syrup (omit for Whole30)1/2 tsp vanilla extract (omit for Whole30 if it has alcohol or sugar)Pinch of sea salt1.5 cups full fat coconut milk (or nut milk of choice)Topping ideas:Fresh or frozen berriesBanana slicesRaw cacao nibsNut butterCinnamon or other spices you likeInstructionsIn a food processor, pulse nuts until they are grainy. Then, transfer to a mason jar. Add chia seeds, ground flax, maple syrup, vanilla, sea salt and coconut milk to jar. Stir to combine everything. Cover and place in the fridge overnight or until it sets. You can enjoy cold or reheat in the microwave or on the stove. I like to scoop a little out of the mason jar into a small bowl, heat for 30 seconds and then add all the toppings! Enjoy!
