Especially when doing a Whole30 egg-free breakfasts just have to happen at some point for me. They’re easy to throw together, quick to cook, and I swear they get better when you have them the day after. What makes me love skillets even more is that they double as a one pan meal. My favorite! This bacon and veggie egg-free Paleo breakfast is no exception. And hey, you can always put an egg on it!Prep time: 10 minutes Cook time: 15 minutes Total time: 25 minutes Serves: 2-3Ingredients: 1 package no-sugar bacon (check labels)1 large white potato or 3 small/medium red potatoes, diced1/2 white onion, diced1 red pepper, diced1 cup halved cherry tomatoes2 large handfuls baby spinach1 tablespoon fresh dill1/2 tablespoon garlic powderSalt and pepper to tasteSqueeze of 1/2 lemonDirections: In a large pan over medium heat, add bacon and let cookRemove bacon from skillet, leaving bacon fat and add in potatoesOnce potatoes start softening, add in onion, pepper, dill, salt and pepperLet cook 3-4 minutes until peppers are tenderAdd bacon back in, stirring to combineAdd cherry tomatoes and spinachStir and allow spinach to slightly wilt and tomatoes to soften, adding juice of 1/2 lemon into skillet while stirringRemove from heat and serve!
