Montreal Green Beans

A quick, simple, delicious way to prepare green beans your family is going to love. If you have mushroom haters in your midst, just omit and double the amount of beans. Either way, you will love these nicely seasoned, garlic-y beans. They were a lovely side with our grilled rib-eye steaks last night. This recipe is suitable for all phases of Atkins, Keto programs, Primal and Paleo.
Makes 4 servings
INGREDIENTS:
3 T. unsalted butter
2 c. green beans, trimmed and cut into 1½-2″ lengths
4-5 medium mushrooms, sliced
1 large clove garlic, minced
Couple shakes each sea salt and coarse black pepper
¼ tsp. my homemade Montreal Steak Seasoning (see recipe below)
DIRECTIONS:
Place beans in saucepan with enough water just to cover.
Bring to boil and then simmer just until tender-crisp.
Drain off water.
Add butter, garlic, salt, pepper to the pan and saute beans over medium-high heat until they are just about done.
Add the Montreal Steak seasoning and mushroom slices to the pan.
Stir-fry just until mushrooms are no longer opaque, stirring occasionally.
Serve at once with grilled steak, pork, seafood or whatever you like.

Homemade Montreal Steak Seasoning
Makes 20 teaspoons.
INGREDIENTS:
2 T. whole black peppercorns
2 tsp. dill seed
1 tsp. coriander seed
2 T. Smoked Spanish paprika (or regular)
1 T. granulated garlic
1 T. minced dried onion
1 tsp. crushed red pepper flakes
DIRECTIONS:
Place all ingredients into a spice grinder or blender and pulse a couple times to coarsely grind.
Place in airtight, lidded jar and store.
