Skillet Sausage and Rice

Easy, 30-minute, one-skillet meal with smoked turkey sausage, fluffy white rice and flavorful veggies.
Prep time: 5 min
Cook time: 15 min
Total time: 20 min
Serves: 4
Ingredients:
2 tablespoons olive oil , divided
1 package (14-ounces) Skinless Smoked Turkey Sausage, cut into 1/2-inch slices
1 yellow onion , diced
1 green bell pepper , diced
salt and fresh ground pepper , to taste
2 garlic cloves , minced
1-1/2 cups low-sodium vegetable broth
2 cups Minute® White Rice (you can also use Brown Rice)
fresh parsley , for garnish
Instructions
Heat 1 tablespoon olive oil in a large skillet.
Add sausage to skillet and cook over medium-high heat for 5 minutes, or until nicely browned, stirring frequently.
With a slotted spoon, remove sausages from skillet and set aside.
Add remaining olive oil to the skillet.
Stir in onions and green pepper; season with salt and pepper and continue to cook for 4 minutes, stirring occasionally.
Add garlic and continue to cook for 1 more minute.
Pour in vegetable broth and bring to a boil.
Stir in rice and previously prepared sausage.
Turn down the heat to medium-low, cover with a lid and cook for 5 minutes.
Remove from heat and stir.
Garnish with parsley and serve immediately.
