But life happened and I didn’t get it shared. Then it became January and I felt like I should be sharing healthy recipes, not chocolate baked oatmeal recipes. But then I realized that it was oatmeal and oatmeal is healthy, right? So maybe this isn’t the healthiest breakfast, but I am pretty sure it is healthier than many of the boxed cereals that you can buy. Ingredients: 3 cups quick cooking oats (I use gluten free quick oats)1/3 cup baking cocoa1/2 cup brown sugar1 1/4 cups milk2 tablespoons butter, melted2 eggs2 teaspoons baking powder3/4 teaspoon salt2 teaspoons vanilla1/2 cup peanut butter (Sunbutter, soybutter, or other peanut butter substitutes work well) 1/2 – 3/4 cup chocolate chipsDirections:Preheat oven to 350 degrees.In a bowl mix together all ingredients until well combined.Grease a 9×13 pan and spread mixture into pan.Bake for 20-25 minutes. If you like it a little more firm and crunch cook for a few minutes longer.Serve with warm milk over top.
