They're whole grain, gluten-free, refined sugar-free, and a great source of protein. Plus they seriously taste like peanut butter cookie dough. This is my family’s new favorite snack/dessert and they’re worth keeping on hand all the time. They’re great post-workout/post-run eats to help replenish your body with protein, healthy fats, and unrefined carbohydrates.Ingredients 1/2 cup creamy natural peanut butter 1/4 cup honey 1/2 cup oats, ground in oat flour (or use 1/2 cup store-bought oat flour)1 teaspoon vanilla extract or vanilla bean paste2 scoops vanilla protein powder1/2 cup roasted salted peanuts, finely choppedInstructionsCombine all ingredients in a large bowl, stirring until a thick dough forms.Use a 1-tablespoon size cookie scoop to portion out mixture. Roll each portion into a ball and place them on a cookie sheet.Refrigerate until firm, approximately 2 hours. Store in an airtight container in the refrigerator for up to two weeks. They hold up well even when room temperature so don't hesitate to pack them in a lunch!Nutritional Information:Calories: 766Total Fat: 9.8g Sat Pat: 1.9g Cholesterol: 12mg Sodium: 66mg Potassium: 172mg Total Carbs: 12.9Fiber: 1.7g Sugars: 7.9g Protein: 9.8g
