It’s great as a main dish with leftover ham. It’s great as a side dish. You could leave out the ham and make it vegetarian. You could sub bacon. You could even sub ground beef. I bet it would still be super delicious with any of those variations.PREP TIME: 15 mins COOK TIME: 50 mins TOTAL TIME: 1 hour 5 mins Serves: 8INGREDIENTS 2 T. butter 2½ cups ham, cubed, preferably from pastured pigs1 cup onion, diced3 lbs. potatoes, sliced thin1½ tsp. sea salt1½ cup cream, preferably from grass fed cows1½ cup milk, preferably from grass fed cows¼ cup flour3 cups cheddar cheeseINSTRUCTIONSMelt butter in skillet over medium heat.Add onions and cook until translucent.Add ham and heat through.In a measuring cup, mix together cream, milk, and flour.In a buttered 9x13 baking dish, add a layer of potatoes.Sprinkle ⅓ of the salt, ⅓ of the ham and onion mixture, ⅓ of the cheese, and ⅓ of the milk/flour mixture.Repeat layers 3 times.Cover and bake at 350 degrees for 30 minutes.Uncover and bake at 400 for 20-30 more minutes, until potatoes are tender and liquid is hot and bubbly.Let stand ten minutes before serving.
