Parmesan Crusted Chicken with Bacon Cream Sauce

I love meat with creamy sauces to dip them in! I baked up this Parmesan Crusted Chicken this week and topped it off with a bacon cream sauce. It was served alongside cheesy cauliflower mash!
It was juicy, flavorful, and filling! The kids (and dog) loved it too! I loved it because it was about 10 minutes of prep, 40 minutes in the oven, and 5 minutes to make the sauce! That translates to an easy peasy lemon squeezy supper!
Prep Time: 10 minutes
Cook Time: 45 minutes
Ingredients for Chicken:
• 1 lb chicken breasts (3 medium sized pieces)
• 1 tablespoon Avocado Oil Mayo (I used Chosen Foods)
• 3 tablespoons shredded Parmesan cheese
Ingredients for Sauce:
• 3 slices bacon, fried and crumbled (I used Hormel Black Label) (reserve the fat)
• 1/2 cup of heavy whipping cream
• 1 tablespoon cream cheese
• 1 tablespoon shredded Parmesan
• 1/2 teaspoon garlic powder
• salt & pepper to taste
Directions:
Preheat oven to 400 degrees.
Rinse and dry the chicken.
Make sure all water is off the chicken or the mayo will not adhere.
Using a silicone basting brush, evenly distribute the mayo on top of each breast.
Top with the shredded cheese and place in prepared baking dish.
Bake uncovered for 40-50 minutes (times could vary due to individual ovens).
Make sure internal temperature is approx. 160 degrees and juices run clear.
When the chicken has approximately 10 minutes left in the oven, begin your sauce.
Using a skillet, warm up the reserved bacon fat over med-low heat.
Do not let it start sizzling or bubbling.
Whisk in the heavy cream until well combined.
Continue whisking until the mixture starts to foam up on the edges of the skillet.
Add the cream cheese and whisk until smooth.
Add Parmesan and garlic powder and whisk until smooth.
Toss in some crumbled bacon, making sure to leave enough for garnishing the chicken.
Plate the meal by doing the following:
Place one chicken breast on a plate.
Drizzle 2-3 tablespoons of the sauce over the chicken.
Top with bacon crumbles.
Leftover sauce will keep in airtight container for 3-4 days.
