Baked Oatmeal with Apple Cheddar and Sausage

Did you know you can bake steel cut oats? I didn’t either until I made this savory Baked Oatmeal with Apple Cheddar and Sausage for #AppleWeek!
I wasn’t sure if I wanted to make an oat-sotto or something else along those lines to show that oatmeal isn’t just for sweet breakfast dishes, but could be for something savory for either breakfast or any other meal. I know. That’s not what you think when you think of oatmeal. It’s typically the brown sugar and cinnamon, apple (hello… #AppleWeek! Had to plug that one), or sometimes even peaches (is there a #PeachWeek?). However, if y’all know me at all you know I’m not about the typical and traditional. I hope you enjoy this "oatmeal" for breakfast or dinner.
Ingredients:
1 tablespoon butter
1/2 cup onion
1 1/2 cups steel cut oatmeal
2 cups milk
3 1/2 cups boiling water
1 cup chopped apples
1 cup chopped sausage
2 cups shredded sharp cheddar cheese
1 teaspoons salt
1 teaspoon black pepper
Instructions:
Preheat oven to 375.
Heat a skillet over medium-high heat.
Melt the butter in the pan before adding the onions.
Saute the onions until slightly soft; about 3 to 5 minutes.
Stir in the oatmeal and cook for 2 to 3 minutes.
Remove from heat and stir in the apples, sauce, 1 cup cheddar cheese, salt, and black pepper.
Pour the milk and boiling water in a 9 x 13 casserole dish.
Stir in the oatmeal mixture, cover, and bake at 375 for 60 minutes.
Remove the cover, sprinkle the remaining cheese on top.
Bake an additional 5 to 10 minutes or until the cheese is melted.
Allow to cool 10 minutes before serving.
