My Cinnamon Pecan Crumb Cake is perfect for breakfast, brunch, dessert, or a mid-afternoon pick-me-up. That’s my favorite time to cut a piece and savor every bite.Prep Time: 15 min Cook Time: 40 min Total Time: 55 min Serves: 16 Ingredients Cake Ingredients: 1 1/2 cups of my Local Baking Mix (1/2 cup each almond flour, coconut flour, ground golden flax)1/3 cup Trim Healthy Mama Gentle Sweet (or my sweetener)4 eggs4 oz half and half2 oz cream cheese, softened2 tbsp butter, softened1 tsp vanilla extract1 tsp cinnamon1 tsp baking powder1/4 tsp saltTopping Ingredients:1 cup almond flour 1 cup pecans, toasted 6 tbsp butter, melted 1/3 cup Trim Healthy Mama Gentle Sweet (or my sweetener)2 tsp cinnamonInstructionsPreheat oven to 350.Grease an 8×8 glass baking dish with butter or cooking spray.In a bowl with an electric mixer combine all the batter ingredients. Mix thoroughly. Pour into the baking dish and spread evenly.Combine topping ingredients in a food processor and pulse until crumbs form. Sprinkle on top of the batter.Bake for 45-50 min until golden and the center feels firm to the touch. Do not underbake.
