Sticky Honey Sriracha Chicken Bites

Today I have a quick, easy and super tasty recipe for sticky honey sriracha chicken bites! This is an Asian style dish where chicken is coated in panko bread crumbs, fried until lightly golden brown and crispy before being tossed in a sweet and spicy sauce. It takes less than 20 minutes to make this meal, so you have plenty of time to cook some rice or pasta to serve it over along with some vegetables to make a complete meal that is easily doable on a busy weeknight.
You can serve the crispy fried chicken tossed in the sauce, with the sauce drizzled over it or even on the side for dipping! No matter how you serve these sticky honey sriracha chicken bites, you are bound to enjoy them!

Ingredients
For the crispy chicken bites:
1 pound boneless and skinless chicken, cut into bite sized pieces
salt and pepper
1/3 cup flour (gluten-free for gluten-free)
2 eggs, lightly beaten
1 cup panko breadcrumbs (gluten-free for gluten-free)
oil for frying
For the honey sriracha sauce:
3 tablespoons sriracha
3 tablespoons honey
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 clove garlic, grated
1 teaspoon toasted sesame oil
Directions
For the crispy chicken bites:
Season the chicken with salt and pepper, dredge it flour, dip in egg and coat with the breadcrumbs.
Heat the oil in a large pan over medium-high heat and cook the chicken until golden brown, about 2-3 minutes, before setting aside on paper towels to drain.
For the honey sriracha sauce:
Mix everything and toss with the chicken or drizzle on the chicken or serve it along with the chicken for dipping!
Option: Replace the panko breadcrumbs with breadcrumbs, crumbled crackers, crumbled chips, crumbled pretzels, etc.
Option: Replace the chicken with shrimp!
Option: Lightly spray the coated chicken with oil and bake in a preheated 400F/200C oven until cooked (165F) and golden brown, about 15 minutes, instead of frying in oil!
