{Slow Cooker} Apple-Pecan Sweet Potatoes (R)From: Stephanie @ www.plainchicken.com/adapted from Southern Living's Big Book of Slow Cooking I'm sharing another great Thanksgiving side dish today. Chicken Legs loves sweet potatoes, but I never make them at home. I decided I needed to fix this oversight ASAP! These Apple-Pecan Sweet Potatoes are delicious and so easy to make. So easy! This recipe is great for Thanksgiving. No worrying about the timing of getting the sweet potatoes done with the rest of the food.Serves: 6 to 8Ingredients: 4 large sweet potatoes, peel and cut into 1 1/2-inch cubes 1 large Granny Smith apple, peel and chopped 1 (14oz) can chicken broth 1/2 cup whipping cream 1/4 cup firmly packed light brown sugar 2 Tbsp butter 1/2 tsp salt 3/4 tsp ground cinnamon 3/4 cup chopped toasted pecans
Instructions: Place sweet potatoes, apple and chicken broth in 6qt slow cooker. Cover and cook on LOW for 8 hours. Drain potatoes and apple. Return to slow cooker. Add whipping cream, brown sugar, butter, salt and cinnamon. Beat at medium speed with an electric handheld mixer until smooth and blended. Stir in pecans. Keep the cooked potatoes on warm until you are ready to serve!

Wow oh wow were these good. I will always make my sweet potatoes (Yams) like this in the future. These were amazing. So, I guess you could say I was impressed and so was my hubby. He hated those old overly sweet yams with marshmallows. He said these were perfect and could I make them this way always. There is hardly any brown sugar in these so it has just a touch of sweetness. Everyone loved them. So, we have 20 people who would give these 5 cupcakes. I was lucky to have any leftovers. I did a recipe and a half because of having so many people at dinner. It completely filled up my crockpot. And, we have 5 teenage boys who loved them. Even my picky 11 year old granddaughter loved them too. We did have one person with a nut allergy, which I didn't find out until we were at dinner. You can add the pecans after or put a couple of servings in another bowl without the pecans. It's tastes good either way. So we highly recommend these. I hope you will try these.
