Parmesan Oven Fried Chicken

I have kind of a love-hate relationship with fried chicken. I love the taste of it. I love the crunch of the crispy, seasoned skin over tender, juicy meat. But I hate all the work and mess that goes into making it. And I’m not that crazy about all the oil that it soaks up to get that delicious coating.
So I’ve found a way to lighten up this recipe, and make it a lot easier at the same time. The key is to let the oven do the work. So instead of battering and frying each piece, one by one, you just bread all the pieces and load them onto a baking sheet. Then they can bake all at once.
This Parmesan Oven Fried Chicken has all the flavor and crunch of the original, with a lot less work. And your waistline will thank you, too.
Prep time:30 mins
Cook time:40 mins
Total time:1 hour 10 mins
Serves: 6
INGREDIENTS
8 pieces of chicken, (Chicken legs and thighs)
½ cup Parmesan Cheese
2 eggs
½ cup Seasoned Bread Crumbs
½ cup Panko Bread Crumbs
1 teaspoon Garlic Powder
1 teaspoon Salt and Pepper (each)
4 Tablespoons Olive Oil
INSTRUCTIONS
Preheat oven to 350
Line a baking pan with parchment paper or foil (just for easy clean up)
Combine the parmesan cheese, panko and seasoned bread crumbs.
Mix well.
Add salt, pepper and garlic to the bread crumb mixture.
Place in a ziplock bag.
In a shallow bowl, break the two eggs and whisk together to combine.
Take each piece of chicken separately, and pat dry.
Coat chicken in egg mixture and drop into the bag of breading.
Close the top and shake it until the chicken is well coated.
Place on the baking sheet.
After each piece is coated, drizzle each piece of chicken with ½ tsp of olive oil, and then bake in the oven for 40 – 45 minutes or until the juices run clear.
Remove from the oven and let rest for 5 minutes before serving.
