With each bite you’ll get: moist cake with a fine crumb; half-melted white chocolate bits with oozy bits and tart and slightly firm strawberries. You’ll also get a sugar hit from that sticky glaze on top. I love the glaze because it also helps to keep muffins moist. The paper cups help seal in the moisture too – that’s why I almost always bake mine in paper cups.Makes 16 Muffins Ingredients 60g (2 oz or 1/4 cup) butter, at room temperature 1/2 cup sugar 2 eggs 1 cup milk 1 teaspoon vanilla extract 2 1/2 cups self-raising flour, sifted 1 punnet strawberries, washed, hulled, roughly chopped 1/2 cup white chocolate bits ¾ cup white chocolate, melted, for glaze (optional)InstructionsPreheat oven to 350F. Line 16 x 1/3 muffin pans with paper cases.Beat the butter and sugar in a medium bowl until pale and creamy. Beat in the eggs, milk and vanilla.Use a large spoon to fold in the flour until just combined. Gently stir in the strawberries and chocolate.Spoon the mixture into the cases. Bake for 15 minutes until lightly golden.Glaze, if using...Melt the white chocolate slowly and then drizzle over the top of muffins.
