Prep time: 10 min Cook time: 20 min Total time: 30 min Serves: Serves 4Ingredients: 1 lb. crimini mushrooms 2 tbsp olive oil ¼ tsp salt ¼ tsp ground pepper 2 garlic cloves, chopped Juice of ½ small lemon 1 tbsp minced flat leaf parsley 5 basil leaves, thinly sliced
Instructions Preheat oven to 450 degrees F. Coat a baking sheet with cooking spray. Cut large mushrooms into quarters, medium sized mushroom in half and leave small mushrooms whole. In a bowl, toss the mushrooms with olive, salt and pepper. Transfer to the prepared baking sheet. Roasted the mushrooms for 10 minutes. Add the garlic and stir to combine. Roast until the mushrooms are tender and starting to brown, 7 to 10 minutes. Transfer to a bowl, and toss with the lemon juice, parsley and basil.
