Grilled Lamb Chops Recipe with Tart Cherry Sauce
from: Dara @ www.cookincanuck.com/
Summer entertaining is meant to be effortless. Even the adults should have time to run through sprinklers and have watermelon seed spitting contests (can you even get watermelons with seeds anymore?) rather than sweating over the grill for the entire evening. Bring on a rousing game of Kick the Can or Ghost in the Graveyard and I’m there! We’re all really kids at heart when it comes to warm, long summer nights.
Grilling is where it’s at during the summer. Flip on the gas grill and cook up almost any kind of meat or veggies within minutes. Ask your guests to bring an appetizer, salad or dessert, or choose some great make-ahead recipes. Add drinks and your entertaining duties are complete.
Prep time: 5 mins
Cook time: 15 mins
Total time: 20 mins
Serves: 4
Ingredients
4 (3 oz. each) lamb chops
¼ tsp salt
¼ tsp ground pepper
The sauce:
1 cup whole Montmorency tart cherries, defrosted
½ cup red wine
¼ cup fresh orange juice
1 tbsp maple syrup
½ tsp crushed rosemary
1 tsp cornstarch
Instructions
Preheat the grill to medium-high.
Lightly coat with oil.
Season both sides of the lamb chops with salt and pepper.
Grill until medium rare (120 degrees F), about 3 minutes per side.
Serve with the tart cherry sauce.
The sauce:
In a medium saucepan, stir together the tart cherries, red wine, orange juice, maple syrup and rosemary.
Bring to a boil and cook for 2 minutes, stirring frequently.
Reduce heat to medium-low and simmer for about 8 minutes.
