Parmesan Spinach Balls

"These delicious little appetizers are always a hit. Serve warm or at room temperature. These can be frozen unbaked and popped into the oven when unexpected guests pop in."
OK the original recipe was written by tish. But, I have added and subtracted a lot of ingredients. So, it's basically mine now. But, I had to give her credit for the basic recipe. Anytime I see a recipe with spinach, I have to add sun-dried tomatoes. They just go great together. These taste great and are very festive looking (red and green) on any appetizer table. Enjoy!

Ingredients
2 (10 ounce) packages frozen chopped spinach, thawed and drained (be sure it's fairly dry!)
1 to 2 cups Italian-style seasoned bread crumbs depending on the dryness of the spinach.
1/3 cup crumbled bacon
1/2 cup sun-dried tomatoes chopped
1 1/2 cups grated Parmesan cheese (1/2 cup reserved)
1/2 cup butter, melted
1 TBL Onion powder
1 TBL Garlic powder
1/2 tsp cayenne pepper (optional)
4 eggs room temperature, 3 lightly beaten 1 reserved
salt and pepper to taste
Directions
Preheat oven to 350 degrees F (175 degrees C).
Chop sun-dried tomatoes into small pieces.
Put three eggs in a small bowl and beat lightly with a fork. (Reserve the 4th)
In a large bowl, mix the dried chopped spinach, sun-dried tomatoes, Italian-style seasoned bread crumbs, 1 cup Parmesan cheese, butter if using, onion powder, garlic powder, cayenne if using, salt and pepper.
Carefully stir in the bacon.
Add in the 3 lightly beaten eggs first to bind ingredients together. Add a 4th if needed.
Shape the mixture into balls no bigger than 1 inch.
Roll in reserved 1/2 cup Parmesan cheese.
Arrange the balls in a single layer on a large baking sheet.
Bake in the preheated oven 15 to 30 minutes, depending on your oven, until lightly browned.
Keep an eye on it the first time you try this recipe.
After that you will know how long it takes to get them golden brown.
If using sun-dried tomatoes in herbed oil, you can omit the butter if you wish.
Serve this with a marina sauce and a sweet honey mustard sauce.
