Caramel Apple Martini (A)

So, some fresh apple goodness, a little vodka because hey, it’s almost the weekend, and some homemade CLEAN caramel? Count me in. I love after a few minutes of sitting that the caramel becomes even more immersed into the cocktail. I swirl it around and boom, even more caramel flavor!
Serves 2
Ingredients
Caramel
1 cup unsweetened coconut milk (can or carton)
1/2 cup raw honey
1 tbsp grass-fed butter or ghee
1/2 tsp vanilla
Drink
1- 1 1/2 cup fresh local apple cider
1 organic apple, pureed
2-3 shots gluten-free vodka
1 tablespoon homemade caramel sauce
1/4 teaspoon cinnamon
1/2-1 cup ice
Garnish
Additional homemade caramel sauce
Thin apple slices
Instructions
for Caramel
1. Heat honey and vanilla until boiling
2. Add in ghee and coconut milk; mix well
3. Bring to a boil over medium heat for 10 minutes
4. Raise heat to high and boil, stirring often for an additional 5 minutes until caramel starts to thicken
5. Reduce heat and let low boil until thick and sticky
6. Turn off heat and let cook for 7-10 minutes
7. Set aside to cool
for drink
1. Place ice water into martini glasses and set aside
2. Peel and core apple, then transfer to your high-speed blender and puree
3. In a shaker, add ice, apple puree, apple cider, vodka, caramel, and cinnamon
4. Shake well
5. Pour out ice water and drizzle cold glasses with additional caramel
6. Pour in cocktail, garnish and serve.
Notes
1. Before serving, taste and adjust as desired (more cider, more vodka, more caramel, etc.)
2. I like Tito's vodka (gluten free)
3. Idea: Apple infused vodka would make this even more wonderful
