Pecan TassiesFrom: Georgia Downard @ www.cooking.com/Active Time 20 min Total Time 45 min Makes: 24 Tassies Ideal as an afternoon sweet with a cup of tea, these easy-to-make mini-desserts freeze beautifully and are great to have on hand for any time of day.Ingredients For dough: 1/2 cup (1 stick) unsalted butter, softened 1 (3-ounce) package cream cheese, softened 1 cup all-purpose flour For filling: 2/3 cup packed light brown sugar 1 large egg 1 tablespoon melted butter 1 teaspoon pure vanilla extract 1/4 teaspoon salt 2/3 cup finely chopped pecans Sifted confectioner’s sugar for garnish
Directions In a medium bowl with an electric mixer, cream the butter and cream cheese. Beat in the flour until mixture is combined well and smooth. Divide the dough into 24 (1-inch) balls and chill 30 minutes. Preheat the oven to 325 degrees F. Coat two 12-cup mini muffin pans with cooking spray. In a bowl, whisk together the sugar, egg, butter, vanilla and salt until combined well. Stir in the pecans. Press dough balls into the bottom and up the sides of each muffin cup, making sure the dough is evenly distributed. Divide the filling among the cups, filling cups about 3/4 full. Bake 25 to 30 minutes, or until filling is set and crust is golden brown. Let cool 5 minutes in pan, then remove from the pan and cool on racks. Dust with confectioner’s sugar before serving.
