Swiss Steak ala Anaheim By Chet Day
Ingredients: 1 1/2 to 2 lbs grass fed sirloin steak or round steak 3 Tbs extra virgin olive oil 1/4 cup flour 1 lb fresh tomatoes or canned 1 Anaheim pepper (chopped) 1 onion 1/4 cup fresh cilantro (chopped) 1 tsp Celtic sea salt 1/4 tsp fresh ground pepper
Instructions: Combine flour, salt, and pepper. Sprinkle round steak with flour mixture.
Brown meat on both sides in oil. Combine tomatoes, green pepper, onion in blender or food processor until desired consistency. Pour over meat. Cover and cook in 275 degreeoven for 1 1/2 - 2 hours or until tender.
Serve the tomato gravy over rice.
