CHOCOLATE COCONUT CANDY

As far as candy goes, this is a pretty healthy version. It does contain some cane sugar as well as honey, but you won’t believe how yummy this chocolate coconut candy is with healthy ingredients like unsweetened coconut, coconut oil, and flax seed.
I’m a big fan of chocolate, nut butters, and anything sweet, but I think that for me the most addicting characteristic of this candy is the creaminess. Yes, it has coconut and ground flax seed, but my mouth still overwhelmed by the creaminess of the other ingredients.
A key ingredient is Justin’s Chocolate Hazelnut Butter (which Shirley got me hooked on). I don’t like to give you recipes that use a specific ingredient like this, but I simply love it. Maybe it’s the organic cane sugar that it contains or simply the chocolate, but I could use this stuff as cake frosting. I do use it (and love it!) in blended coffee and in this candy.
If you don’t want to buy the chocolate hazelnut butter and you’re willing to experiment, I bet almond butter and cocoa would work too with a little added sweetener. Let me know if you give it a try.
Serves: Makes 12
INGREDIENTS
½ cup Justin's Chocolate Hazelnut Butter
½ cup shredded unsweetened coconut
2 Tablespoons coconut oil (soft but not melted)
1 Tablespoon honey
¼ cup ground flaxseed
INSTRUCTIONS
Line a mini muffin tin with paper liners.
Place all ingredients in a bowl and stir together until combined.
Spoon into mini muffin cups and chill for several hours.
Serve cold.
