Spiced Zucchini Muffinsby The Recipe Diva @ www.therecipediva.com/These are super healthy and a great way to sneak veggies and whole grains into your diet. My kids love them and so do I! This recipe makes a huge batch and I usually freeze half. Feel free to cut in this recipe in half if you don't need quite so many! Prep time: 20 min Cook time: 25 min Ready in : 45 min Yield: 24 muffins Ingredients 1 cup white sugar 1 cup brown sugar 1/2 cup applesauce 1/2 cup vegetable oil 3 eggs 1 teaspoon vanilla extract 2 cups shredded zucchini 1 1/2 cups whole wheat flour 1 1/2 cups all-purpose flour 1 tablespoon cinnamon 1 teaspoon nutmeg 1 teaspoon salt 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon ground cloves 1/2 cup raisins
Instructions: Preheat oven to 350 degrees F. Grease 2 (12-cup) muffins pans. Beat sugar, applesauce, oil, eggs, and vanilla extract together until smooth. Fold in the zucchini. In a separate bowl, whisk together both flours, cinnamon, nutmeg, salt, baking soda, baking powder, and cloves. Gradually stir into other mixture until fully combined. Fold in raisins. Spoon mixture into muffin cups. Bake for 20-25 minutes, until a toothpick inserted into the center of the muffin comes out clean. Cool on a wire rack.
