CORNMEAL CRUSTED AVOCADO WITH EGGS, TOMATO & CRISPY BACON

Over the last few months I’ve been making a huge effort to eat a healthy, well balanced breakfast. One that includes lots of protein, healthy fat and carbohydrates in the form of vegetables. My go to has been eggs, bacon and sliced tomatoes. Delicious, but after a while? Boring.
Plus, I needed some healthy fat in that mix. Enter California Avocados.
I pan fried some avocado slices in masa harina – a.k.a. corn flour. It’s gluten free and adds a nutty, delicious crust. So suprising and mouthwatering…honestly, I could eat an entire avocado prepared this way…and probably will. Avocado fried in masa harina makes a pretty stellar side. You could also use corn meal, which is usually easier to find in the market. Just go for the finest grind possible.
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Yield: 4 servings
Serving Size: 1/4 recipe
Gather
1 just ripe avocado
4 tablespoons masa harina (or corn meal finely ground)
1/4 teaspoon salt
2 tablespoons ghee or butter, divided in half
2 large tomatoes
4 slices bacon
4 eggs
Step by Step
Cook your bacon - make it crispy.
I did mine in the microwave.
Crunch it up and set aside.
While the bacon is cooking, slice your tomato.
Press some of the seeds/water out to avoid a big liquid-y mess on your plate!
Get ready to cook your avocado!
Cut it open lengthwise, remove the pit, and gently remove the insides with a big spoon so each half is as intact as possible.
Slice the avocado lengthwise into about 1/2 inch slices.
Put the masa harina in a shallow bowl and season with the salt.
Heat a non-stick skillet over medium high heat and add 1/2 of the ghee.
Gently coat the avocado with masa harina/salt mixture and place it in the hot pan.
Fry the avocado for about 1 minute on each side, or until browned and crunchy.
Remove the avocado from the pan and set aside.
Wipe out your skillet - time to cook some eggs!
Here, you get some choice...cook your eggs the way you like them.
I usually fry mine and leave the yolk runny. You can also poach them.
Or make them sunny side up. Your call! You can use the rest of the ghee to cook the eggs.
Ok, assembly time! Make a layer of tomato...then avocado.
Gently place the egg on the avocado, then sprinkle with crumbled bacon.
Devour!
