One Dish Mexican SkilletFro: Liz @ pocketchangegourmet.com/This quick and easy One Dish Mexican Skillet is sure to become a family favorite! Ready in about 20 minutes, this recipe is perfect to serve on it’s own or as a taco filling. Our family loves Mexican food, not too spicy, but the all the deep flavors are delicious. I always add Mexican to our Menu Plan each week, for us it’s Wednesday. This Mexican Skillet was no exception, we all loved it. The dish has all the flavors of a great taco, but in an easy to fix one dish method.Prep time: 5 mins Cook time: 10 mins Total time: 15 mins Serves: 4-6 servings Ingredients 1 pound ground beef 2 tablespoons Homemade Taco Seasoning or 1 envelope store bought ¾ cup Beef Stock, canned or in a box 1 (16 oz) can Diced Tomatoes with Green Chilies, drained ½ cup Salsa, homemade or store bought 2 cups frozen Corn, thawed 2½ cups grated Sharp Cheddar Cheese, divided - keep ½ cup for topping Corn Chips, optional Green Onions, sliced, optional
Instructions In a large skillet (we used a cast iron pan) brown the ground beef, drain if necessary. Add the Taco Seasoning, Beef Stock, Tomatoes, Salsa, and Corn. Heat through about 5 minutes. Add 2 cup of cheese and heat through 10 minutes or so until cheese is melted and the flavors are well blended together. Add ½ cup cheese on top until melted. Top with corn chips and green onions if desired. Serve immediately with chips and salsa, or as a taco filling.
