Chili Corn Dog PieFrom: Lynn @ www.lynnskitchenadventures.com/I tried a new recipe for dinner last night for my cooking through my collection series. It was one of those really quick and easy type ones and it contained hot dogs. I was not that impressed with the recipe. It was ok, but I was not sure it was worth sharing. My 10 year old son though had 4 helpings of it. I think this means I need to share the recipe. Any meal that gets a 10 yo boy to eat 4 helpings needs to be shared. This Chili Corn Dog Pie is a meal that not only will kids love, they will enjoy cooking it as well. And in my opinion recipes like that are worth keeping. Ingredients: 2 -15 ounce cans chili – or use 4 cups homemade chili *6-8 hot dogs cut into small bite sized pieces 1 cup cornmeal 1 teaspoon baking powder 1/2 cup milk 1 egg 2 tablespoons oil 1 cup shredded cheddar cheese
Instructions: Spread chili into an 11×7 inch pan. Place hot dogs on top of chili. In a bowl whisk together cornmeal, baking powder, milk, egg, and oil and spread over hot dogs. Sprinkle cheddar cheese on top. Bake at 350 for 25- 30 minutes or until topping is lightly browned. Serve and enjoy!Note:* You can get away with less hot dogs if you want. 4 would do nicely if needed. Make sure to get "good" hot dogs without fillers.
