Chocolate Coconut Chia Pudding From: Heather @ shrinkingkitchen.com/
Chia seeds are truly a superfood – high in omega-3’s (more than salmon!), easier to digest than flax seeds and they make you feel fuller for longer as they absorb ten times their weight in water! These little sponge like seeds create a gel when soaked in liquids which make them a perfect base for a healthy pudding. This chocolatey , coconutty pudding is dairy free, gluten free and can even be vegan if you substitute a sweetener like stevia for the honey. You can serve it for breakfast, snack or dessert. And it’s absolutely delicious. All you need is shredded coconut, coconut milk, chia seeds, cocoa and honey or another sweetener of your choice.
Prep Time: 5 minutes Cook Time: 5 hours Total Time: 5 hours, 5 minutes
Yield: 1 serving
Gather 1 cup plain coconut or almond milk 1 teaspoon cocoa 1 teaspoon raw honey 1 tablespoon unsweetened shredded coconut* 2 tablespoons chia seeds
Step by Step Place all ingredients in a sealable container - I used a pint sized mason jar. Seal it up tight and shake the heck out of it...or enlist your kids for this 'fun' job! Place in the fridge at least 5 hours or as long as overnight. Enjoy!
Loupy's Note: I am not a fan of coconut. So, I will omit it and just make it with almond milk and I use Swerve sweetner instead of honey.
