Bite Sized Parmesan Popovers By Maureen Luchejko @ www.cooking.com
Not to worry if you don’t have a popover pan, these delicate little gems are baked in a mini-muffin tin.
Makes 24
Ingredients 2 large eggs 11/4 cups milk 1 cup all-purpose flour 1/3 cup grated Parmesan cheese 2 tablespoons olive oil 1/2 teaspoon salt 1/2 teaspoon coarsely ground pepper
Directions Beat the eggs in a medium bowl until blended. Whisk in the milk, flour, cheese, olive oil, salt and pepper until just blended. Let stand 10 minutes. Preheat the oven to 425 degrees F. Place a 24-cup mini-muffin pan in the oven and heat 5 minutes. Remove the muffin pan from the oven and spray the muffin cups with nonstick spray. Fill each cup about three quarters full with the batter. Bake 15 minutes. Do not open the oven. Reduce the oven temperature to 350 degrees F and bake until the popovers are puffed and golden, about 15 minutes longer. Serve warm.
