Baked Sweet Potato CakesFrom: myfridgefood.com/Cooking Time: 30 Recipes Makes: 4 Ingredients: 2 sweet potatoes 1/2 cup liquid egg whites 1 cup Parmesan cheese 1/2 teaspoon rosemary 1/4 teaspoon pepper
Directions Preheat oven to 425. Set a wire rack on top of a baking sheet. Spray rack with non-stick spray. Peel the Sweet Potatoes. Grate the potatoes and squeeze the moisture out. (I just squeezed them in my hands) Less moisture, means crispier cakes. Add egg whites, cheese, pepper, and rosemary to the grated potatoes. Scoop out the mix and set on the wire rack.
