Pepperidge Farm Mint Milano Cookies

Today's secret recipe will show you how to make Pepperidge Farm's classic mint Milano cookies at home. These simple yet elegant cookies have the perfect balance of exquisite cookie and luxuriously rich mint chocolate filling. These cookies are the perfect snack or can make a great gift for a friend. Everyone loves a Milano cookie.
Fudge Striped Shortbread Cookies
Makes about 24 cookies.
Ingredients:
2 sticks butter, softened
1/2 cup granulated sugar
1 3/4 cups all purpose flour
1/4 tsp salt
2 tsp vanilla extract
1 cup good quality semisweet chocolate chips
Instructions:
Preheat oven to 350 degrees F.
Cream together the softened butter and sugar either using a mixer or a wooden spoon.
Add the flour, salt and vanilla and mix until a soft dough comes together.
Wrap dough in plastic wrap and chill for thirty minutes.
After chilling, roll dough into a log and gently slice 1/2-inch cookies.
Place cookies on a lined cookie tray and bake for 20 minutes, or until the edges start to brown.
Remove from oven and let cool completely.
To make the chocolate, pour the semisweet chips into a glass bowl and microwave for 30 seconds intervals
until creamy and smooth, mixing well after each interval.
Scoop warm melted chocolate into a small plastic bag and cut the tip off the bag.
Drizzle the chocolate over each cookie and let cool to harden.
To make the Pepperidge Farm Mint Milano Cookies
one recipe fudge-striped shortbread dough (Above)
1 cup semisweet chocolate chips
1/4 tsp peppermint extract
Bake shortbread cookies according to recipe directions.
Let cool completely.
Melt chocolate in a glass dish in the microwave during 30 second intervals, stirring well after each.
When chocolate is smooth, add mint extract and mix well.
Slather melted chocolate on one cookie and then sandwich another cookie on top.
Repeat until all cookies are sandwiched together.
Let cool for a few minutes until chocolate hardens.
Store in a sealed Tupperware container.
