Creamy Garlic Noodles {Homemade Pasta-Roni}From: Steph @ www.plainchicken.com/adapted from The Cheese Pusher One of my favorite quick side dishes is to open a box of Rice-A-Roni or Pasta-Roni. They taste good and are super easy to make. I saw a version of this recipe floating around on Pinterest and thought it sounded like Pasta Roni. It had two of our favorite flavors, garlic and parmesan, so I decided to give it a try. OMG - SO delicious and super easy! This is a one-pot dish and it doesn't require precooking the noodles. They cook right in the pot! Awesome! We served the noodles with one of our favorite grilled chicken recipes, Rosemary Ranch Chicken. The noodles tasted great and were almost as easy as opening a box of Pasta-Roni. This will definitely be a regular side dish for us. I am already planning on making these again this coming weekend.Ingredients: 2 tsp olive oil 6 cloves garlic, minced 2 Tbsp unsalted butter 1/4 tsp salt 1/2 tsp pepper 3 cups chicken stock 1/2 lb angel hair pasta 1 cup grated parmesan cheese (green can) 3/4 cup heavy cream 1 Tbsp dried parsley
Directions: In a large pot, heat olive oil over medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Add the butter; cook until melted. Add the salt, pepper and chicken stock. Turn the heat up to high and let come to a boil. Add the pasta and cook for 4-5 minutes. Once pasta is tender, reduce the heat to medium and stir in the parmesan, cream and parsley until cheese is completely melted. Remove from heat and serve immediately.
