This is an easy and quick weeknight meal that will have your family gathering around the table in no time. In this Italian dish, juicy oven baked boneless chicken breasts are paired with pasta (in this case spaghetti, but you can use fettuccine, penne or any other noodles) in simple garlic sauce and topped with grated Parmesan cheese. This recipe serves 2, but can be easily doubled or tripled.Serves: 2Ingredients FOR CHICKEN: ½ boneless skinless chicken breast 2 Tbsp butter 1 Tbsp oil 2 tsp garlic,minced 1 Tbsp brown sugar (optional) salt, black pepper, to taste red pepper flakes (optional) FOR SPAGHETTI: about ⅓ lb spaghetti 3 Tbsp butter 2 tsp garlic,minced salt, pepper to taste grated Parmesan cheese
Instructions Season chicken breast with salt, black pepper and red pepper flakes. Place in well oiled porcelain or pyrex baking dish. In a small pan, heat butter and oil, add garlic and cook for just a few seconds. Do not allow garlic to brown or it will taste bitter. Add browm sugar and mix. Cover chicken breast with this mixture. Bake @ 350F/175C for about 25-30 minutes or until chicken is cooked through and juices run clear. In the meantime cook spaghetti in salted water and drain. In a pan, melt butter, add garlic and cook for a few seconds. Season with salt and pepper. Add spaghetti and toss well to combine. Serve with grated Parmesan cheese. Garnish with chopped parsley (optional).
