Maple Sausage Pancake Muffins
From: Lynn @ www.lynnskitchenadventures.com/
Over the last several years I have seen many versions of pancake muffins, both online and in magazines. Some of the versions are pretty basic and some are a bit more complicated. I loved the idea, but wanted to adjust it for our tastes and wants.
What I was looking for in a pancake muffin was more of a meal all by itself. I wanted something that my kids could easily heat up on their own and have a complete breakfast.
In order to make it more of a complete meal I knew I wanted to add either sausage or bacon to the pancake muffins, so I decided to add the pancake syrup to the batter. The result was something we all loved. The flavor of syrup mixed with the sausage was delicious and we ended up with a fun new breakfast treat. I love keeping these in the freezer for those busy mornings. We quickly put them in the microwave to heat up and breakfast is ready in no time.
Ingredients:
Use your own pancake batter made according to directions OR Any recipe that uses 2 cups flour or 2 cups dry mix
1/2 lb ground breakfast sausage, cook until browned and done and drain off fat
1/2 cup maple syrup, if you use real maple syrup it will have more of a maple flavor, if you use pancake syrup it gives it a different taste. My kids prefer the pancake syrup flavor.
Directions:
I used a regular sized muffin tin.
Make pancake batter according to directions and stir in cooked sausage and maple syrup.
Pour into grease muffin tins and bake at 350 for 18 minutes or until done.
Eat warm or cool completely and freeze.
