And tiny little cucumber sandwiches and petits fours and scones. I didn’t do tea parties growing up, so let’s just say that’s all not my scene. Scones mostly show up at tea parties. Why ... no one knows. But hey, that’s where my wife picked up on scones, and they’re yummy so, “Yay, tea rooms!”.Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Yield: 4 - 4½ dozen Ingredients 6 cups flour 1 cup sugar 4½ tablespoons baking powder 1½ teaspoon salt 3¾ sticks butter (30 tablespoons), diced, room temperature 1½ cups buttermilk milk or buttermilk (for glazing)
Optional mix-ins 1 cup raisins & 2 tablespoons orange zest -OR- 1 cup each craisins (dried cranberries) & chopped walnuts -OR- 1 cup each dried apricots & chopped pistachios -OR- 1 cup dried cherries and 2 tablespoons lemon zest
Instructions Combine all the dry ingredients in a large bowl. Add the butter and cut in with a pastry cutter, or beat with a mixer, until it forms coarse crumbs. Stir in the buttermilk to form a soft dough. Divide the dough into four equal portions and add the mix-ins of you choice. Roll out a quarter-inch to a half-inch thick and cut into circles, squares, or other shape. Brush the top with milk or buttermilk.
Bake at 425°F for 12-15 minutes, until golden brown. Let cool and enjoy!
