Buttermilk Biscuits
Serves 9 Diabetes friendly
Ingredients: 1 cup flour, all-purpose 1 tablespoon flour, all-purpose 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/4 cup margarine 1/3 cup buttermilk 2 tablespoon buttermilk
Preparation:
1. Preheat the oven to 425 degrees F. Prepare a cookie sheet with nonstick pan spray.
2. Combine 1 cup of the flour, the baking powder, baking soda and salt in a medium bowl. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Stir in the buttermilk to get a stiff dough.
3. Roll or pat out the dough on a board floured with the remaining 1 tablespoon flour to 1/2-inch thickness. Cut 2-inch rounds and place the biscuits 1 inch apart on the prepared cookie sheet. Use all the dough, but do not roll it out more than twice or you'll toughen it.
4. Bake for 8 to 10 minutes, or until puffed and golden. Serve hot or warm. [/size]
