Homemade Vanilla PuddingFrom Lynn @ www.lynnskitchenadventures.com/Ingredients: 3/4 cup sugar 4 tablespoons cornstarch 1/8 teaspoon salt 1 cup cream (You can use all milk, but I like to use at least part cream for the liquid) 2 1/2 cups milk 3 egg yolks 1 tablespoon butter 1 tablespoon vanilla
Instructions: Combine sugar, salt, and cornstarch in a saucepan. Whisk in cream, milk, and egg yolks, Cook over medium high heat, stirring constantly for 3-5 minutes or until thickened. (Do not let it boil) Remove from heat. Stir in vanilla and butter. Whisk until butter is melted. Strain through a fine mesh sieve to remove any lumps. Cover with plastic wrap for storage. To prevent a skin or film from forming be sure to place plastic wrap up against the pudding, not just over the top of the bowl. Serve warm or cold. Homemade Butterscotch PuddingFrom Lynn @ www.lynnskitchenadventures.com/Ingredients: 1 cup brown sugar 3 tablespoons cornstarch 2 eggs 1/8 teaspoon salt 2 cups milk ¾ cup butterscotch chips (If you are gluten free be sure to check the ingredients not all are gf)
Instructions: In a pan combine sugar and cornstarch. Slowly whisk in milk and cook over medium heat until thickened slightly. In a small bowl whisk eggs and add about ½ cup of hot milk, cornstarch, mixture. Whisk together well. You are tempering the eggs here. Add egg mixture back into the remaining milk mixture. Add salt and continue cooking over medium heat until thickened. Remove from heat and stir in butterscotch chips and until chips are melted. Homemade Double Chocolate PuddingFrom Lynn @ www.lynnskitchenadventures.com/Ingredients: 1 cup white sugar 6 tablespoons unsweetened cocoa powder 1/2 cup cornstarch 1/8 teaspoon salt 5 1/4 cups milk 4 tablespoons butter 2 teaspoon vanilla extract 1/2 cup chocolate chips
Instructions: In a saucepan, stir together sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in milk. Bring to a boil, and cook, stirring constantly, until mixture thickens. Remove from heat, and stir in butter, chocolate chips, and vanilla. Stir until chocolate chips have melted. Serve warm, or chill in refrigerator until serving.© 2008–2014 Lynn's Kitchen Adventures. Easy Lemon PuddingFrom Lynn @ www.lynnskitchenadventures.com/Ingredients: ¾ cup sugar ¼ cup cornstarch 2 ½ cups milk 3 egg yolks, beaten ¼ teaspoon salt ½ cup lemon juice 2 tablespoons butter
Instructions: In a saucepan whisk together sugar and cornstarch. Over medium heat, slowly whisk in milk. And cook for 2-3 minutes or until slightly thickened. Place one cup of hot pudding mixture into a small bowl with the egg yolks. Whisk together. You are tempering the eggs. Return egg/pudding mixture to the pan and continuing cooking over med heat until thickened. You need to stir this consistently. Remove from heat and add lemon juice and butter. Stir until butter is melted and mixture is combined. Strain pudding to remove any lumps. Serve warm or cover with plastic wrap and store in the refrigerator.© 2008–2014 Lynn's Kitchen Adventures.
