Gluten-Free Cocoa-Fudge Pecan Brownies From: Pat @ elegantlyglutenfree.com
Most cocoa is gluten-free, but, as always, check the ingredients. I often use Hershey's® Cocoa because it is gluten-free.
Once in a while, chocolate can be appropriate for healthy gluten-free living. When that time comes around, brownies are one of my favorite ways to have it. Here's one of my favorite recipes.
Makes 16 brownies
Ingredients:
1/2 Cup Butter, or Earth Balance buttery sticks 1 Cup Sugar 1 Teaspoon Vanilla, Gluten-Free 2 Eggs 1/3 Cup Hershey's® Cocoa 1/2 Cup Rice Flour, or Gluten-Free Flour Mix 1/2 Teaspoon Xanthan Gum (omit this if using a GF Flour Mix with Xanthan or Guar Gum in it) 1/2 Cup Pecans, broken
Directions:
-Soften butter ONLY enough so that you can cream it -- not too soft. (The structure from creaming helps make good brownie texture.) -Cream butter, sugar and vanilla with whisk or mixer; beat in eggs. -Blend in cocoa, flour, xanthan gum and nuts. (If using a GF baking mix, check the ingredients to see if it already has xanthan or guar gum in it. If so, don't add more.) -Bake in greased 8x8x2" pan in a slow oven (325 degrees) for 30 to 35 minutes, until firm in center. -Cool. Cut in 16 squares.
Even though these ingredients are usually gluten-free, always be sure to check the ingredients list on every label before you start cooking.
These brownies are gluten-free (no wheat, barley or rye), and can also be casein-free if made with dairy-free margarine sticks.
