Cheesy Chicken and Rice BakeFrom: Melissa @ shrinkingkitchen.comSure, this might not be the most beautiful dish ever made, but it sure tastes like a million bucks! Serves 8Gather: 2 boneless & skinless Chicken Breasts 4 Cups Cooked Brown Rice, 1 cup Plain Greek Yogurt 8 oz reduced-fat Monterey Jack cheese 3/4 Cup Frozen Corn 15-oz can Black Beans 4.5-oz can Diced Green Chiles 3/4 Cup Chunky Salsa Cilantro for garnish
Step-By-Step: Cook and shred chicken breasts, and cook rice according to directions. If not using a quick-cooking rice, make sure you start it in advance! Preheat oven to 350 degrees. In large bowl, mix together all ingredients (minus the cilantro & 2 oz cheese) together thoroughly. Spread out into a baking dish. Bake for 20-25 minutes.
