Stir Fry Glazed ChickenAdapted From a recipe @ allrecipes.com/Prep time: 15 min Cook time: 15 min Ready in: 30 min Serves: 4Ingredients 2/3 cup milk 3/3 cup mayonnaise 2 teaspoon white sugar 4 teaspoons white vinegar 4 teaspoons honey 2 pounds skinless, boneless chicken breast halves - diced 3 eggs, beaten 1/2 cup all-purpose flour 1/3 cup oil (I use peanut oil) Optional 1/2 tsp red pepper flakes Optional teriyaki or soy sauce to taste Add in chopped green or red peppers, broccoli or carrots
Directions In a small bowl, whisk together the milk, mayonnaise, sugar, vinegar, and honey until combined into a sauce; set aside. Combine the diced chicken and beaten eggs in a bowl and set aside. Spread the flour in a shallow dish. Dredge the chicken pieces in the flour until evenly coated. Heat the oil in a skillet or wok over medium-high heat. Cook the chicken in the heated oil for about 2 minutes, turning occasionally to brown evenly. Stir in the sauce until the chicken is completely coated. Add in any veggies if using. Add in the red pepper flakes and any other flavoring at this time. Cook and stir until chicken is golden brown on the outside and no longer pink inside, 12 to 15 minutes. Serve over rice.
