Paleo Sausage BallsAuthor: Linda Etherton @ glutenfreehomemaker.com/Sausage balls are great for breakfast, snacking, appetizers, or served as part of dinner, and I like having a variety of ways to serve protein. (Sausage balls are more fun than sausage patties!) I chose to use coconut flour in these because I thought I would like the texture better than using almond flour. They turned out good, and we really enjoyed them, but the coconut flavor does come through a little. I think it would work to substitute almond flour, but I’m new to grain-free baking and haven’t tried the recipe that way, so you’re on your own if you try that. Makes about 35 balls. Ingredients 1 pound sausage (I used homemade) ¼ cup coconut flour 2 large eggs 1 teaspoon baking soda
Instructions Preheat oven to 350°. Combine all ingredients. A stand mixer with the paddle attachment works well. Form into balls 1¼ inches in diameter. Place on a greased baking sheet and bake at 350° for 20 minutes. Copyright © 2013 GlutenFreeHomemaker.com
