Chicken Stir Fry with Sesame SauceFrom: debbidoesdinnerhealthy.blogspot.com/This is an easy recipe. You don't have to use the veggies I did. Just use what you have on hand. The sauce is amazing. Serves: 4Ingredients: 1 1/2 lbs. chicken, cut into bite size chunks 1 1/2 lbs. broccoli 1 zucchini 1 yellow summer squash 1 red pepper 1 1/2 onions 3 green onions 1 carrot Water Chestnuts
Sauce: 3/4 cup soy sauce 2 tbsp. garlic, pressed 3 tbsp. seasoned rice vinegar 1/4 cup splenda 1 tbsp. sesame oil 2 tbsp. cornstarch 3/4 tsp. red pepper
Instructions: Chop all the veggies into bite sized chunks. Brown the chicken in a pan with a bit of cooking spray. Add onions and red pepper, cook for about 2 - 3 minutes. Add the rest of the veggies and the sauce and cook until veggies are done and sauce is thickened, about 6 - 8 minutes.
