Peanut Butter Oatmeal Breakfast Cookies

The oatmeal and peanut butter in these make them hearty and delicious. My kids love these. You can eat these as is or heat them up slightly in the microwave. Either way they are great.
These also freeze well, so they are perfect for making a large batch and keeping in the freezer for busy mornings.
Ingredients:
3 cups quick cooking oats
1/2 cup brown sugar
1/2 cup milk
2 tablespoons butter, melted
2 eggs
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons vanilla
1/2 cup peanut butter or peanut butter substitute
1/2 cup chocolate chips, optional
Directions:
Mix all ingredients together and stir well.
Drop by the spoonful onto a cookie sheet.
Bake at 350 for 11-12 minutes.
Let cool on cookie sheet for about 5 minutes then remove to wire rack to cool.
