Quick Chili Dilly BeansFrom: www.healthyseasonalrecipes.com Yield: 6 cups drained beans Ingredients: 1 pound green beans, stemmed 3 cup water 2 cups white vinegar 2 Tablespoons salt 1 tablespoons pickling spice 1 teaspoon black pepper corns 4 dill seed heads, or ½ tsp dill seed 2 cloves garlic, peeled and sliced lengthwise 2 red chili peppers, sliced lengthwise 2 shallots, peeled and sliced with root end intact
Instructions: 1.Bring a large pot of water to a boil. Set up a large ice water bath. Blanch green beans until crisp-tender, 3 to 4 minutes. Transfer to the ice bath, using a sieve or slotted spoon. Cool and drain. 2.Meanwhile bring water, vinegar, salt, pickling spice and pepper corns to a boil in a medium saucepan and stir until the salt is dissolved. Boil 5 minutes. 3.Place dill seed heads or dill seed, chilies, garlic and shallot in a 2.5 quart lidded container. Lay cold blanched beans in container. Pour boiling hot vinegar solution through strainer over the green beans. Make sure that they are fully submerged. Cool, cover and refrigerate 1 day to marinate.
