Clean Blueberry Protein Muffins
From: Kelly @ www.eat-yourself-skinny.com/
Recipe adapted from Tone It Up
These are completely clean and organic, made with very similar ingredients to the protein pancakes I make every morning and there is absolutely no oil or butter used. I also add cinnamon and a touch of vanilla as well to sweeten them up. The protein I use is *Perfect Fit vanilla protein powder, but you could use any kind you like! These will last for about a week in a container and makes about 12 large muffins. I didn't have any walnuts on hand so I simply used almond flour as a substitute, but either one would taste great!
Serve with a sprinkling of powdered Stevia and you've got your breakfast prepared for the week! I like to nuke mine in the microwave for about 15 to 30 seconds before eating and I usually serve with egg whites or some additional fruit so please make sure to fill up, breakfast is the most important meal of the day! They're also really low in carbs and super high in protein.
I mean who doesn't love a guilt-free breakfast??
