Pumpkin Bread
3 cups sugar 1 cup salad oil - I use Canola 4 eggs - beaten - hand beat 2 cups pumpkin - (1) 16oz can 3 1/2 cups all purpose flour 1 tsp baking powder 2 tsp salt 2 tsp baking soda 2/3 cup water 1/2 tsp cloves 1 tsp cinnamon 1 tsp nutmeg 1 tsp allspice 1 cup nuts - optional
Combine sugar, oil & eggs - beat until fluffy. Stir in pumpkin. Combine dry ingredients - stir into pumpkin mixture. Add water and nuts. Pour into 2 greased loaf pans. Bake at 350 degrees for 65 - 75 minutes.
Sometimes I use 4 small loaf pans and bake 10 minutes less and give them as gifts.
