Sun-Dried Tomato Hummus
Hummus has to be a favorite snack for my wife and I. We love it on Cracked Pepper Triscuits, toasted pita chips, or just plain pitas. It is high in fiber and has lots of other stuff that's incredibly good for you.
This recipe came about when we ran out (of hummus) and my wife couldn't find our favorite brand at the store. Instead, she showed up with a can of garbanzo beans and a pleading look in her eyes. How could I deny her? The light cream cheese and just a touch of olive oil makes it wonderfully smooth and tasty. Let's eat!
Ingredients: 1 15-ounce can garbanzo beans (drained and rinsed, reserve 1/3 cup of the liquid from the beans) 3 ounces reduced fat cream cheese 1 ounce sun-dried tomatoes, minced 1/4 cup sliced green onion (white and pale green parts only), sliced thin 2 teaspoons prepared horseradish 1 tablespoon lemon juice 1/2 teaspoon olive oil 1/2 teaspoon salt 1/2 teaspoon fresh ground pepper
Directions: Combine all ingredients in a food processor or blender and puree until smooth. Check taste and add additional salt, pepper and horseradish, to taste.
Use with your favorite cracker, chips, vegetables or pita bread
A two tablespoon serving of this hummus is only 79 calories 3 grams of fat 2 grams of fiber
