Bacon Cheddar Corn Muffins debbidoesdinnerhealthy.blogspot.com/Ingredients: 4.5 oz. flour, about a cup 3/4 cup yellow cornmeal 1/2 cup (2 oz.) shredded sharp cheddar cheese 2 tbsp. sugar 1 tsp. baking powder 1 tsp. baking soda 3/4 tsp. ground cumin 1/4 tsp. salt 4 pieces of bacon, cooked, drained and crumbled 1 jalapeno pepper, seeded and minced 1 1/4 cups buttermilk 1/4 cup canola oil 1 large egg Cooking spray
Instructions: Combine flour and next 7 ingredients (through salt) in a large bowl, stirring with a whisk. Stir in bacon and jalapeno. Combine buttermilk, oil and egg in a small bowl. Add to flour mixture, stirring just until moist. Line muffin tray with 12 liners and spray with cooking spray. Divide batter among muffin cups. Bake at 375 for about 15 minutes.
