McMuffin Casserole www.plainchicken.com/serves 4Ingredients: 4 English muffins, split 6 oz Canadian bacon 1 cup cheddar cheese 4 eggs 1 1/4 cup milk salt pepper
Instructions: Grease an 8-inch square baking dish. Cube English muffins and chop Canadian bacon. Add half of the cubed English muffins in a single layer. Top with half of the Canadian bacon and 1/2 cup of the cheese. Layer the remaining English muffins and Canadian bacon and 1/2 cup more cheese.
Whisk together the eggs, milk, salt, and pepper in a medium bowl until combined. Pour the egg mixture evenly over the casserole. Wrap the baking dish with plastic wrap and place refrigerate for at least 1 hour, or up to 1 day.
Bake at 325 degrees 45 to 50 minutes.

I am liking anything I can make ahead of time and just pop in the oven in the morning or have ready in my crockpot for breakfast. I am not a morning person and this makes it so much easier for me.
Yummo is all I can say. This was a great casserole. I decided late last night to make this. We had all the ingredients. So, I put it together and put it in the fridge for overnight. Baked it this morning and it was outstanding!!! It was a change for us because my DH loves potatoes in the morning.
The things I did differently were: I did not split the english muffins just diced them up as they were and I used light multi grain muffins. I also did not layer the ingredients. I just put in the cut up muffins and Canadian bacon and sprinkled them around on one layer. I added 2 extra eggs. I looked and 4 eggs just didn't seem enough for the amout of muffins and it worked great. So, I poured the egg and milk over the muffins and meat and then topped with cheese. Some of the ingredients setteled down due to the cut up muffins. Baked it at 350 for about 45 minutes and it was wonderful!!! (I had to up the oven temp because DH had to be at work and he forgot to put it in the oven. I did not mean it to happen this way. It worked out great. Not over cooked or undercooked.) I will be making this again. Both my husband and I loved it. Having the muffins instead of potatoes is a nice change. Try this and I do recommend making it the night before. I don't think an hour will give the muffins enough time to soak up the egg goodness. JMHO.
